Early Birds – a series of wines created with a focus on the freshness and modern style of rosé. Produced in Bulgaria from a region with proven traditions in growing international varieties. The winery works with selected massifs and technology aimed at preserving the aroma, elegance and lightness of rosé.
Terroir
Soils: alluvial and clay-sandy terrains
Climate: temperate-continental with hot days and cool nights – a prerequisite for a bright aromatic profile and good acidity
Exposure: sunny slopes, suitable for slow and even ripening
These conditions create a concentrated, fresh and drinkable rosé.
Vinification
Manual or selective mechanical harvest in the early morning
Quick processing of the grapes to avoid excessive coloring
Short cold maceration for delicate color and aroma
Soft pressing and fermentation in stainless steel tanks at low temperature (12–15°C)
Short aging on fine lees for more volume and softness
Organoleptic characteristics
Aroma:
Delicate nuances of strawberry, raspberry, fresh red fruit, white flowers, light citrus notes and minerality.
Taste:
Fresh, elegant and dry. Fruity start, juicy acidity, light creaminess from the lees. Finish – clean, refreshing and pleasantly fruity.
