Izba Karabunar is a Bulgarian winery located in the Thracian Lowlands – a region known for its favorable conditions for the production of quality and expressive wines. The Bizu series is created in a modern, fresh style and is aimed at wines with pronounced fruitiness, lightness and excellent drinkability.
Varieties: Cabernet Sauvignon
Terroir: The vineyards are located in the Karabunar region, Thracian Lowlands. The soils are alluvial-clay with good drainage, and the climate is moderately continental, with warm days and cool nights. These conditions allow the grapes to retain their freshness and aromatic potential, especially suitable for the production of elegant rosé wines.
Vinification: The grapes undergo a short maceration with the skins to achieve a delicate pink color. Fermentation takes place at a controlled low temperature in steel vessels, in order to preserve the fruit aromas and fresh acidity. The wine is not aged in oak to emphasize the clean and fresh style.
