New Bloom Winery – a modern winery located in the city of Sliven, in the heart of the Thracian Lowland, one of the most favorable regions for growing red varieties in Bulgaria.
Variety: 100% Regent
Terroir: The vineyards are located in the Thracian Lowland, where the climate is warm and dry, with pronounced temperature amplitudes between day and night. The soils are clay-sandy with limestone inclusions, which ensures a concentration of aromas and a good balance between sugars and acids.
Vinification: The grapes are hand-picked, undergo strict selection and ferment at a controlled temperature in stainless steel vessels. Part of the wine is aged in oak barrels for additional structure and depth.
Organoleptic characteristics
Color: rich dark ruby
Aroma: rich bouquet of fruit varieties – dark fruits, mulberry, plum, a hint of violet and noble barrique maturity with nuances of sweet spices
Taste: very pleasant, harmonious taste with gentle barrique finesse – a hint of cinnamon and dark chocolate; with volume, juicy length, softness and an appetizing finish
Food pairings: cold appetizers, tuna, duck magret, Alsatian specialties and spicy dishes from traditional cuisine; delicious with mature dry meats, sausages and especially with white Bulgarian brine cheese
