Terroir:
The vineyards are located in the Eastern Thracian Lowland, on sandy-clay soils. The climate is moderately continental with hot summers and cool nights, which favors the ripeness and structure of the grapes.
Vinification:
Hand picking and selection of grapes
Cold maceration at 8°C for maximum extraction of aromas and color components
Alcoholic fermentation at controlled temperature in oak and stainless steel vessels
Malolactic fermentation spontaneously in new French oak barrels
Aging 12 months in new French oak barrels (225 l), controlled humidity and temperature
Organoleptic characteristics:
Color: Intense dark red with violet hues
Aroma: Complex, with nuances of black berries, spices, black pepper, with subtle oak notes
Taste: Full, juicy body, balanced tannins and a long finish with spicy and fruity accents
Food pairing:
Suitable with red meats, game, mature cheeses and spicy dishes.
