Santa Sara is a Bulgarian winery with a distinctly modernist approach, which has been gaining attention since its establishment at the beginning of the new millennium with a distinctive style focused on small batches, low yields and terroir wines. Its wines are known for their density, maturity and elegance.
Varietal composition: Cabernet Sauvignon
Terroir: The vineyards are located near the village of Lozen, at the foot of the Stara Planina Mountains, at an altitude of about 300 m. The soils are rich in clay-limestone and sandy structures, and the climate is moderately continental with excellent conditions for red varieties.
Vinification: The grapes are hand-picked, subjected to cold maceration, then fermented at a controlled temperature in stainless steel vessels. After fermentation, the wine is aged in oak barrels for 12 months, which contributes to its structure and complexity.
Organoleptic characteristics
Aroma: Intense aroma of black berries, dried herbs and spices, complemented by nuances of coffee and smoke.
Taste: Rich, voluminous and full-bodied with ripe tannins, hints of dark chocolate and black cherry and a long, warming finish.
Food pairing: Suitable with grilled beef, game dishes or mature cheeses.
Serving temperature: 16°–18°C
Aging potential: Up to 7 years after harvest
