The New Bloom Winery project was founded with the idea of ​​combining modern winemaking with the potential of Sakar and the Thracian Lowlands. The winery has over 600 hectares of vineyards near the village of Opanets, Pleven region, where the climate is temperate-continental, with good temperature amplitudes and winds that help natural ventilation of the vineyards.

Variety: Sauvignon Blanc

Terroir: The vineyards are located in the area of ​​the village of Opanets. The soils are mainly alluvial-stony with good drainage. The temperate-continental climate with warm days and cool evenings allows for optimal ripening of the grapes and preservation of freshness and aromatic potential.

Vinification: The grapes are harvested mechanized early in the morning to preserve freshness. After selection, they are vinified in stainless steel vessels at a controlled temperature. Fermentation proceeds slowly to preserve the typical aromaticity of the variety. The wine is not aged in oak and is bottled in a fresh, primary style.

Organoleptic characteristics
Colour: Light yellow with greenish highlights.
Aroma: Intense nose with dominant notes of citrus, green apple, elderberry and grassy nuances.
Taste: Light body with pronounced freshness, crisp acidity and a clean, juicy finish with a slight mineral accent.

Food pairings: Goes well with salads with fresh herbs, seafood, goat cheese and vegetarian dishes.
