Karabunar Winery is located in the eponymous wine-growing region in the Western Thracian Lowlands and is part of the Via Vinera project. The winery combines modern technology with a terroir focus, creating fresh, modern wines with a strong varietal identity.
Varietal composition: Pinot Gris, Sauvignon Blanc
Terroir: The vineyards are located on sandy-clay soils with southern exposure and good sunlight. The area is characterized by a continental climate and regular ventilation, which helps to accumulate an intense aromatic profile and maintain natural acidity.
Vinification: The grapes from the two varieties are vinified separately at low temperatures to extract maximum aromas. After fermentation in stainless steel vessels, the blend is carefully combined and aged briefly on fine lees with a light batonage for greater structure and softness.
Organoleptic characteristics
Aroma: Fresh and expressive, with nuances of lime, green apple, peach and white flowers.
Taste: Light and well-balanced body with pleasant fruit development, juicy acidity and a clean, refreshing finish.
Food pairings: Suitable for chicken with herb sauce, shrimp with green salad or bruschetta with avocado and lime.
