Pascal Jolivet is a leading name in the Loire Valley, known for his modern approach and emphasized elegance in his wines. Varietal composition: 100% Sauvignon Blanc
Terroir: The vineyards are located in the Touraine region, on calcareous-clay soils with good drainage and exposure, which allows optimal ripening of the grapes. The microclimate of the Loire Valley with cool nights preserves the freshness and aromatic intensity of the variety.
Vinification: The grapes are hand-picked and subjected to cold maceration for a short period. Fermentation takes place at a controlled temperature in stainless steel tanks with wild yeasts. The wine is aged briefly on the fine lees without malolactic fermentation, which preserves the bright acidity and freshness.

Aroma: Bright and expressive nose with nuances of grapefruit, guava, green apples and herbal notes.
Taste: Fresh, lively and balanced, with good length, citrus tones and a mineral finish.
