Fontana Candida is a leading winery in the Lazio region, located in the hills around Rome, in the heart of the Frascati area. Established in 1958, the winery plays a key role in promoting local varieties and styles, relying on modern technology and preserving the terroir identity.
Varietal composition: Malvasia, Greco, Trebbiano
Terroir: The vineyards are located on volcanic soils, rich in minerals, with good drainage and southern exposure. The microclimate in the Castelli Romani area is temperate, with maritime influence and regular wind, which helps to balance ripening and preserve the freshness of the grapes.
Vinification: The grapes are harvested in the cool morning hours and subjected to a gentle press. Fermentation takes place at low temperature in stainless steel tanks. After a short stay on the fine lees, the wine is bottled to preserve the fruity and floral characteristics.
Organoleptic characteristics
Aroma: Fine and attractive nose with notes of white flowers, peach, pear and citrus.
Taste: Light and fresh, with a delicate structure, harmonious acidity and a mineral finish.
Food pairing: Excellent with caprese, asparagus risotto, pizza bianca, chicken with cream sauce or pan-fried fish.
