Variety: Sauvignon Blanc (100%)
Terroir: With soils that are mainly calcareous and sandy, providing good drainage. The climate is Mediterranean, with warm summer months and cool nights, which creates perfect conditions for the slow ripening of Sauvignon Blanc, preserving its freshness and aromas.
Vinification: The grapes are harvested by hand and undergo fermentation at a controlled temperature in steel tanks. The wine does not undergo aging in oak barrels to preserve the freshness and intensity of the fruity aromas of the variety.
Organoleptic characteristics
Colour: Pale golden yellow with greenish hues.
Aroma: Fresh and intense, with notes of citrus, passion fruit, green apple and slightly grassy accents.
Taste: Light to medium body with high acidity, giving the wine a crisp and refreshing structure. The taste is fruity and balanced with a slightly mineral aftertaste.
Food pairings: Suitable for seafood, oysters, fish dishes, salads with citrus dressings, pasta with herbs and white rind cheeses.
Serving temperature: 8°–10°C
Aging potential: Up to 3 years, the wine will retain its freshness for the first 2 years after harvest.
