Varieties: Shiroka Melnika Loza, Mourvèdre
Terroir: The vineyards are located in the Thracian Lowlands, with soils that are predominantly clay and limestone, providing good drainage. The climate is continental-Mediterranean, with warm summer days and cool nights, which creates ideal conditions for the slow and even ripening of the varieties, preserving their freshness and aromas.
Vinification: The grapes undergo fermentation in stainless steel tanks at a controlled temperature to preserve the freshness and fruity character. The aging is short to preserve the lightness and elegance of the wine.
Organoleptic characteristics
Colour: Pale pink with slight purple highlights.
Aroma: Fresh and fruity, with notes of raspberries, strawberries and light floral accents.
Taste: Light to medium body with well-balanced acidity, giving a crisp and refreshing structure. The taste is fruity and intense with slightly spicy notes and a mineral aftertaste.
Food pairings: Suitable for salads with citrus dressings, grilled seafood, pasta with light sauce, roasted chicken and light cheeses.
Serving temperature: 8°–10°C
Aging potential: Up to 2–3 years, with the wine retaining its freshness for the first 2 years after harvest.
