Midalidare Estate – a prestigious winery located in the picturesque village of Mogilovo, in the heart of the Valley of Roses. The winery is among the most modern in Bulgaria and is distinguished by ecological viticulture, manual selection of grapes and a desire to create wines that express the purity of the terroir and Midalidare’s own style.

Varietal composition:
Mainly Syrah and Cabernet Sauvignon, in proportions determined according to the harvest, to achieve a balance between freshness and structure.
Terroir:
The vineyards are located around the village of Mogilovo, at the foot of Sredna Gora. The area is characterized by a continental climate with cool nights and rich clay-stony soils, which provides fine aromas, freshness and mineral character of the wines.
Vinification:
The grapes are hand-picked in the early morning hours and undergo gentle pressing. Fermentation takes place in stainless steel tanks at low temperatures to preserve the delicate fruit aromas. The wine is then aged briefly on the fine lees, which adds body and an elegant texture.

Aroma:
Fresh and refined nose with aromas of strawberry, wild raspberry, pink grapefruit and light floral nuances.
Taste:
Lively and harmonious, with pleasant acidity and a clean, fruity-mineral finish that brings a feeling of lightness and balance.
Food pairings:
Perfect as an aperitif, as well as in combination with salads, seafood, light pastas and soft cheeses.
