Produced by Zagrey Winery – a certified organic winery located near Parvomay in the heart of the Thracian Lowlands. Created with the idea of highlighting the potential of the local Mavrud variety, the winery combines sustainable viticulture practices with a precise, modern style of vinification.
Varietal composition: 100% Mavrud
Terroir: The vineyards are located at the foot of the Rhodope Mountains on clay-limestone soils with good drainage. The southern exposure and the continental climate with warm days and cool nights favor slow ripening and accumulation of aromatic compounds.
Vinification: The grapes are hand-picked at optimal ripeness. After a short maceration, they move on to gentle pressing and fermentation at low temperatures in stainless steel vessels. The wine is aged briefly on fine lees in order to give texture and balance.
