E.Mirolio is a Bulgarian winery located in the region of Southern Bulgaria. Variety: Cabernet Sauvignon, Merlot
Terroir: The vineyards are located in Southern Bulgaria, in the Thracian Lowland region, with soils that are predominantly sandy-clay and limestone, providing good drainage. The climate is continental-Mediterranean, with hot summer months and cool evenings, which creates conditions for the slow ripening of the varieties, preserving their freshness and intensity.
Vinification: The grapes are harvested by hand and undergo fermentation at a controlled temperature in steel vessels. The wine does not undergo aging in oak barrels to preserve the freshness and fruity aromas of the varieties.
Organoleptic characteristics
Colour: Dark ruby with violet highlights.
Aroma: Intense and rich, with notes of black berries, cherries and slightly spicy accents.
Taste: Medium-bodied with well-balanced acidity and soft tannins. The taste is fruity and slightly spicy with a long aftertaste.
Food pairings: Suitable for roast lamb, pork with spices, pasta with red sauces, mature cheeses and spicy dishes.
Serving temperature: 16°–18°C
Aging potential: Up to 5 years, with the wine developing additional complexity in the next 2–3 years after harvest.
