Domaine Boyar is among the leading wineries in Bulgaria with a long history and a modern vision. The Corten series presents selected wines from the eponymous vineyard in the southeastern part of the country, at the foot of the Sakar Mountain.
Varietal composition: Merlot
Terroir: The vineyards in Corten are located on sandy-clay soils, with good drainage and southern exposure. The region is characterized by long, sunny summers and cool evenings, which contribute to the slow ripening and development of rich aromas.
Vinification: The grapes are hand-picked at optimal ripeness. After careful selection, fermentation takes place at a controlled temperature, followed by maceration to extract color and structure. Aging takes place for 10 months in oak barrels made of Bulgarian and French oak.
Organoleptic characteristics
Aroma: Rich nose with aromas of black cherry, black plum, tobacco and a fine vanilla accent.
Taste: Full-bodied and soft, with well-developed tannins, a structured body and a long chocolate finish.
Food pairings: Recommended with roast lamb, duck breast with red fruit sauce or hard cheeses.
Serving temperature: 16°–18°C
Aging potential: Up to 6 years after harvest
