E.Mirolio is a modern Bulgarian winery in the village of Elenovo. It has its own vineyards and a fully equipped winery, uniting Bulgarian terroir with Italian precision in technology and style.
Varietal composition: Rubin
Terroir: The “Varvishteto” massif is located near the village of Elenovo, on clay-limestone soils with good drainage. The local climate is characterized by hot days and cool nights, which contributes to the accumulation of coloring and aromatic substances in the grape skins and to the creation of wine with a solid character and good aging potential.
Vinification: The grapes are hand-picked, passed through a sorting line and maceration for maximum extraction of color and tannins. Alcoholic fermentation takes place at a controlled temperature, after which the wine ages for 18 months in French oak barrels. The final selection is bottled after additional stabilization in the bottle.
Organoleptic characteristics
Aroma: Rich bouquet of ripe berries, plum and blackcurrant, combined with nuances of black pepper, cocoa and tobacco.
Taste: Concentrated, with well-integrated oak notes, soft tannins and a long spicy finish with a ripe fruit accent.
Food pairings: A great choice for veal with demi-glace sauce, duck breast with berries or old Bulgarian cheeses.
Serving temperature: 16°–18°C
Aging potential: Up to 8–10 years after harvest
