Tsarev Brod Winery – a modern Bulgarian winery with a focus on terroir varieties
Tsarev Brod Winery is located in Shumen and is known for the high quality of its wines made from its own vineyards. The winery is distinguished by its clean style, carefully selected varietal composition and clearly expressed terroir character. Cabernet Franc is one of its signature red varieties, showing impressive elegance and North Bulgarian identity.
Terroir – Danube Plain (Danube Plain PGI)
The vineyards are located in Northeastern Bulgaria – an area with excellent conditions for red and aromatic varieties.
Soils: chernozem and loess, rich in minerals and typical of the Danube Plain; provide good structure and fruit expression.
Climate: continental with a significant amplitude between day and night temperatures. This allows for excellent ripening of Cabernet Franc, while preserving its freshness and finesse.
Variety: 100% Cabernet Franc.
Vinification
The grapes are hand-picked at optimal technological ripeness. After passing through a sorting line, fermentation at a controlled temperature in stainless steel vessels follows. Maceration is carried out to extract color and structure. Part of the wine is aged in oak barrels (French oak), which adds complexity, spicy nuances and roundness.
Organoleptic characteristics
Aroma
Delicate and elegant aromas of red fruits — cherry, raspberry, red currant — complemented by leafy and herbal nuances characteristic of Cabernet Franc, as well as delicate accents of vanilla and light oak.
Taste
Medium to full-bodied, soft, ripe tannins and freshness typical of the variety. The taste reveals a combination of red fruits, light spice, herbal tones and mineral length. The finish is harmonious and elegant.
Food pairings
Suitable for beef steak, lamb, pasta with meat sauces, roasted vegetables, mature cheeses and dishes with herbal accents.
