Red wine Rondo Winemaker's Selection 2023 is a limited edition from the Medi Veli winery - a modern family project located at the foot of Sredna Gora. The winery is distinguished by its innovative style and clean winemaking, focused on local and international varieties grown in a sustainable manner.
Variety: Rondo
Terroir: The vineyards are located in the village of Mechkarevo, Sliven region. The climate is moderately continental with good solar exposure and constant air circulation from the mountain to the valley. The soils are sandy-clayey, poor in humus, which stimulates deep rooting and concentrated aromas.
Vinification: The grapes are hand-picked in the early morning hours, carefully sorted and macerated at low temperature. This is followed by classic fermentation in stainless steel vessels with a moderately long maceration on the skins to extract maximum color and aroma. The wine is briefly aged in French oak barrels, which softens the tannins and adds complexity.
Organoleptic characteristics
Aroma: Bright and fresh nose with dominant red fruits - blackcurrant, cherry and dogwood, complemented by subtle spicy notes.
Taste: Light body with elegant structure, velvety tannins and a refreshing finish with a hint of herbs.
Food pairing: Suitable for serving with duck magret, beef tartare or soft cheese with cranberries.
Serving temperature: 14°–16°C
Aging potential: Up to 3 years after harvest
