Staro Oryahovo Winery is a boutique winery located in Northeastern Bulgaria, near the Black Sea coast. It works with limited series of grapes, its own production, with the emphasis on authentic style and minimal technological intervention.
Variety: Cabernet Franc and Cabernet Sauvignon
Location of the vineyards: Tsonevo village, Varna region
Altitude: 130 – 160 m.
Soil: gray forest, alkaline, rich in clay, calcium and other minerals
Climate: The maritime influence ensures cool nights and a long growing season, which leads to excellent preservation of the acidity and aromatic potential of the grapes
Vinification: After manual harvesting and sorting, fermentation takes place in stainless steel vessels at a controlled temperature. The use of oak is avoided in order to emphasize the freshness, fruity character and varietal purity of the wine. After a short rest in stainless steel, the wine is bottled young.
Organoleptic characteristics
Color: beautiful and sparkling ruby red
Aroma: ripe cherries, sour cherries, plums and a hint of dry leaves
Taste: juicy, fruity and rounded body with pleasant tannins and excellent freshness; pleasant and again fruity, warming finish
Food pairings: young cheeses, roasted vegetables, pasta with tomato sauce and meats
Serving temperature: 15°–17°C
