Terroir: The vineyards are located in the region of southern Bulgaria, with soils that are predominantly clay and limestone, providing good drainage. The climate is continental-Mediterranean, with warm summer days and cool evenings, which create ideal conditions for the slow and even ripening of Mavrud, preserving its freshness and fruity aromas.
Vinification: The grapes are harvested by hand and undergo fermentation at a controlled temperature in steel vessels. The wine undergoes aging in oak barrels, which adds additional complexity and depth to the taste.
Organoleptic characteristics
Color: Dark ruby with violet reflections.
Aroma: Intense and rich, with notes of black berries, cherries, black pepper and slightly spicy accents.
Taste: Medium to full-bodied with well-balanced acidity and soft tannins. The taste is fruity and intense with a slightly spicy and long-lasting aftertaste.
Food pairings: Suitable for roast lamb, pork with aromatic spices, pasta with red sauces, hard-textured cheeses and mature cheeses.
Serving temperature: 16°–18°C
Aging potential: Up to 5 years, with the wine developing additional complexity over the next 2–3 years after harvest.
