Korten Winery – a modern winery located in the heart of the Thracian Lowland, near the village of Korten, Nova Zagora Municipality. The winery is known for its terroir wines, produced from its own vineyards and aged under optimal conditions. The Soliter series presents limited wines from selected arrays, characterized by high quality and individual style. Variety: 100% Merlot Terroir: Selected vineyards located in the area of the village of Elenovo – hilly terrain with southern exposure and well-drained clay-limestone soils. The climate is continental, with hot summers and cool nights, which contributes to the optimal ripening of the grapes and the accumulation of rich phenolic compounds. Vinification: The grapes are hand-picked at optimal ripeness. After crushing and fermentation at a controlled temperature, the wine undergoes maceration in order to extract color, aroma and structure. Aging takes place in 225-liter French oak barrels for a period of 12 to 14 months, followed by bottle maturation in the cellar. Organoleptic characteristics Color: Deep ruby color with purple highlights. Aroma: Complex nose with notes of ripe black fruits - blackberry, black cherry and plum, enriched with nuances of vanilla, chocolate and oak spices. Taste: Full, balanced and velvety, with well-integrated tannins and a long, warm finish. Food pairings: red meats, game, mature cheeses and rich dishes with mushrooms or wine-based sauces. Serving temperature: 16°–18°C Aging potential: 6–8 years after harvest.
