New Bloom Winery – a modern winery located in the town of Sliven, in the heart of the Thracian Plain, Bulgaria. The winery is known for its philosophy of combining traditional Bulgarian practices and modern technologies, in order to create wines with a distinct regional character and modern style.
Terroir: Cabernet Sauvignon vineyards are planted in the Thracian Plain, where sunny days and cool nights ensure even ripening of the grapes. The soils are clay-stony, rich in minerals, which gives the wines structure, concentration and elegance
Vinification: The grapes are hand-picked and carefully sorted. Fermentation takes place in stainless steel vessels at a controlled temperature to preserve the varietal aromas. Part of the wine is aged in oak barrels, which adds softness and complexity

Color: dark ruby
Aroma: pleasant fruity bouquet with aromas of plum, blackcurrant, black cherry and elegant barrique maturity with nuances of chocolate, vanilla and sweet spices
Taste: with good structure, fresh length and harmony with an appetizing finish and a lasting aftertaste
Food pairings: in combination with dishes of traditional Bulgarian cuisine - pheasant, turkey, duck, veal, lamb, mutton and beef, large game, selected sausages, dry meat specialties, bacon, barbecue, and mature cheeses.
