Yamantievi Winery is located at the foot of the Eastern Rhodopes, near Ivaylovgrad. The winery focuses on the production of terroir wines from its own vineyards, applying innovative methods with respect for tradition.
Grape variety: Merlot
Terroir: The vineyards are located on hilly terrain with southern exposure, on volcanic and limestone soils. The mild Mediterranean climate, with long sunny summers and a smooth transition between seasons, favors the slow and even ripening of the grapes.
Vinification: The grapes are hand-picked, sorted and macerated at a controlled temperature. Alcoholic and malolactic fermentation take place in stainless steel and oak. The wine ages for a minimum of 18 months in new French barrels and another 12 months in bottle before being released on the market.
Organoleptic characteristics
Aroma: Rich nose with dominant nuances of black cherry, cedar, chocolate and oriental spices.
Taste: Tight and full-bodied, with excellent development in the glass, pronounced tannins and a long, noble finish with a liqueur note.
Food pairing: An ideal choice for slow-roasted lamb, veal steaks with herb butter or long-matured cheeses.
Serving temperature: 17°–18°C
Aging potential: Up to 10 years after harvest
