Medi Valley – Bulgarian Oak – Winemaker’s Selection – a modern Bulgarian winery located in Southern Bulgaria, in the Thracian Lowland region. Medi Valley is known for its focus on local varieties and precise work with oak, combining traditional Bulgarian winemaking practices with a modern approach to winemaking.
Terroir
The vineyards are located in the Thracian Lowland – an area with fertile alluvial-clay and sandy-clay soils. The climate is temperate-continental with a pronounced Mediterranean influence – warm summers, mild autumns and excellent conditions for full ripening of the autochthonous Mavrud and Rubin varieties. The significant temperature amplitudes help to accumulate aromas and preserve freshness.
Vinification
The grapes are harvested at optimal technological maturity and undergo careful selection. Fermentation takes place at a controlled temperature in stainless steel tanks, with extended maceration to extract color, tannins and body. Part of the wine is aged in Bulgarian Oak, which imparts characteristic spicy and vanilla nuances without dominating the fruit profile.
Organoleptic characteristics
Aroma:
Intense and complex nose with notes of black cherry, blackberry, dried plum and blueberry, complemented by nuances of vanilla, clove, dark chocolate and a light toast from the oak.
Taste:
A dense and harmonious wine with well-integrated, ripe tannins. The taste is rich, with dominant dark fruits, light spiciness and balanced acidity. The finish is long, warm and memorable, with delicate oak accents.
Food pairings
Suitable for red meats, game, lamb, veal, traditional Bulgarian dishes, roasted meats, mature and hard cheeses.
