Medi Veli is a boutique winery located in the village of Smochevo, at the foot of the Rila Mountains. The project was created with the mission to showcase the rich potential of the region through small batches of authentic wines, produced with attention to every detail.
Varietal composition: Cabernet Franc
Terroir: The vineyards are located at an altitude of about 650 meters above sea level, on sandy-clay soils with a limestone base. The climate is cool, with distinct temperature amplitudes between day and night, which helps slow maturity and preserve freshness in the grapes.
Vinification: After manual harvesting and selection, fermentation takes place in small vessels at a controlled temperature. The wine is aged in oak barrels to develop its characteristic velvety profile. The final blend is personally selected by the winery's oenologist.
Organoleptic characteristics
Aroma: Complex nose with accents of blackcurrant, green spices, berries and a hint of violets.
Taste: Elegant body with finely expressed tannins, soft and rounded mouthfeel, ending with a long, mineral finish.
Food pairings: Goes excellent with duck with cherry sauce, veal steak with cream pepper sauce or stuffed sun-dried tomatoes with goat cheese.
Serving temperature: 16°–18°C
Aging potential: 5–7 years after harvest
