Rossidi Winery is a small Bulgarian winery located in the Nikolaevo region, which works with a focus on local varieties and expressing the regional character of the grapes.

Terroir:
The vineyards are located in Central Bulgaria, at the foot of Sredna Gora - an area with a temperate continental climate, good temperature amplitudes and conditions for slow and even ripening of the Mavrud variety, which contributes to concentration and freshness.
Vinification:
The grapes are harvested at optimal phenolic ripeness. Fermentation takes place at a controlled temperature in order to extract color, aromas and structural tannins. The wine is created in a fruity style, emphasizing the authentic character of the variety, without aggressive intervention.
Organoleptic characteristics
Aroma:
Intense and full-bodied nose with aromas of ripe black fruits – blackberry and black cherry, complemented by light spicy and earthy nuances, typical of the Mavrud variety.
Taste:
Medium to full-bodied with well-formed tannins, balanced acidity and a juicy fruit profile. The finish is soft, slightly spicy and persistent.
Food pairings:
Suitable for red meats, roasted and grilled meats, traditional Bulgarian cuisine, mature yellow cheeses and semi-hard cheeses.
