Izba Sliven, Domaine Boyar is a Bulgarian winery located in the southern part of the country. The winery is known for its wines produced with attention to the terroir and traditions of the region. Terroir: The vineyards are located in the southern part of Bulgaria, in the Thracian Lowland region, with soils that are mainly clay and limestone, providing excellent drainage. The climate is continental-Mediterranean, with hot summer months and cool evenings, which create ideal conditions for the slow ripening of Merlot, preserving its freshness and fruity aromas.
Vinification: The grapes are harvested by hand and undergo fermentation at a controlled temperature in steel vessels. The wine does not undergo aging in oak barrels, in order to preserve the freshness and intensity of the fruity aromas.
Organoleptic characteristics
Colour: Intense ruby red with light violet reflections.
Aroma: Rich and fruity, with notes of black berries, such as cherries and plums, with slightly spicy accents.
Taste: Medium-bodied with well-balanced acidity and soft tannins. The taste is fruity-intense with a slightly spicy and long-lasting aftertaste.
Food pairings: Suitable for roast meat, pasta with red sauces, pork with spices, mature cheeses and various meat dishes.
Serving temperature: 16°–18°C
Aging potential: Up to 3 years, with the wine developing additional complexity in the next 2 years after harvest.
