Borgo Scopeto is a winery with a long history, located in the heart of Chianti Classico, in the Castelnuovo Berardenga area, near Siena. Founded in 1000, it came under the management of Caparzo in 1998 and is known for its high-quality wines, grown on 37 hectares of vineyards at an altitude of between 350 and 400 m above sea level.

Terroir:
The vineyards are located in the Chianti Classico area of Tuscany, on calcareous clay soils. The climate is continental, with warm summers and mild winters, which is ideal for growing red varieties.
Vinification:
The grapes are hand-picked and carefully selected. Fermentation takes place at a controlled temperature of 28–30°C for 6 days, followed by 10 days of maceration. The wine undergoes spontaneous malolactic fermentation and is aged for 12 months in 30-hl Slavonian oak barrels, followed by 2 months of bottle aging.

Organoleptic characteristics
Colour: Intense ruby red.
Aroma: Broad and intense, with notes of raspberries, cherries, black berries, vanilla, cocoa and a slight woody aroma.
Taste: Dry, well-structured, with balanced acidity and soft, ripe tannins.
Finish: Long, with a pleasantly spicy and fruity aftertaste.
Food pairings:
Ideal with pasta with red sauces, roast meat, game, mature cheeses and traditional Tuscan dishes.
