Our red wine bears the succinct name "Red" and the label perfectly reflects our idea for the wines in this line: whether blended or single-varietal, whether from local or international varieties, with each harvest we want to show a new interpretation of Bulgarian red wine. Elegant, layered and modern.
The 2021 vintage is a blend of 85% Cabernet Sauvignon and 15% Rouen.
The varieties are fermented separately, blended and aged for 9 months in 300 liter used French barrels. The wine was bottled on 22.12.2022, without treatments or filtration and appeared on the market after 10 months of aging in bottle, preparing to present itself to you in its best light. Whether it's fruity, earthy, elegant or native we're not sure, we just know that it's anything but laconic.
Suitable foods: Bulgarian cuisine - grilled or pan-grilled pork, veal or beef, meatballs, kapama, cured meats, feta cheese, various casseroles, minced meat and leek pie, mushroom dishes.

Bottled Opinions is a project of oenologist Desislava Hitova and wine taster and journalist Yana Petkova.
Conceived as a women's wine project, Bottled Opinions is above all an expression of worldview, discovery and pushing boundaries. Our idea is to select varieties from different vineyards in the country every year and transform them the way we want to show them to the public. We want to make wines beyond the mainstream, natural, with style and vision that provoke the heart and the mind. The main role is played by Desislava Hitova, because without her knowledge and hands we would not exist. The supporting role is performed by Yana Petkova, who leads the marketing activities of the project.
