Zaara Estate is a boutique winery located near the village of Glavan, in the heart of the Thracian Lowlands. Combining modern technologies with sustainable viticulture and a focus on terroir character, the winery works exclusively with grapes from its own vineyards.
Varietal composition: 100% Syrah
Terroir: The vineyards are located on hilly terrain with southern exposure in the valley of the Sazliyka River. The soils are sandy-clay, well-drained, with the presence of limestone and gravel. The region has a clearly continental climate - hot days and cool nights, which contribute to the accumulation of phenolic compounds, color and complexity in the grapes.
Vinification: The grapes are hand-picked in early October at full ripeness. After sorting and crushing, cold maceration follows to extract color and aroma. Alcoholic fermentation takes place in stainless steel vessels at a controlled temperature. Part of the wine is aged for several months in French oak barrels to develop structure and depth without the varietal character dominating.
Organoleptic characteristics
Aroma: Complex nose with accents of ripe black fruits – blackberry and blackcurrant, black pepper, vanilla and a hint of leather.
Taste: Medium to full-bodied, well-structured with soft, ripe tannins and a spicy, balanced finish with nuances of black cherry and dark chocolate.
Food pairings: Goes well with duck magret, lamb with rosemary, beef steak and hard cheeses with a spicy profile.
Serving temperature: 16°–18°C
Aging potential: Up to 5 years after harvest
