Borovitza Winery is located in northwestern Bulgaria, at the foot of the Belogradchik Rocks. Created with the idea of showcasing the region's terroir through signature and low-volume wines, the winery works with local varieties and a handmade wine philosophy.
Varietal composition: Gamza
Terroir: The vineyards are located in the area of the village of Gratska Bucha, at an altitude of about 300 m. The soils are calcareous and sandy, with good drainage. The region is characterized by a cool climate and long vegetation, which allows the variety to develop its delicacy and aromatics.
Vinification: The grapes are hand-picked, carefully selected and fermented in stainless steel at a moderate temperature. Aging is short, in vessels that preserve the fresh and fruity style of the variety, without heavy oak intervention.
Organoleptic characteristics
Aroma: Delicate and clean nose with notes of red cherry, plum, dried flowers and grassy nuances.
Taste: Light to medium body with elegant structure, velvety tannins and a fresh finish with a slightly spicy finish.
Food pairings: Ideal with roasted vegetables, homemade pâtés, chicken with herbs or fresh cheeses such as brie and goat cheese.
