Katarzyna Estate is a winery located near the village of Mezek, in the Eastern part of the Thracian Lowlands, where the climate and soils create a favorable environment for growing red varieties. The name "White Soil" comes from the specific type of pale limestone soils that give elegance and minerality to the wines of this series.
Varietal composition: Mavrud
Terroir: The vineyards are located on limestone-stony terrain with good drainage. The region has a warm continental climate and a favorable day-night temperature amplitude, which supports the development of a complex aromatic profile and fresh acidity.
Vinification: Hand harvesting is followed by selection and maceration at a controlled temperature. Fermentation takes place in stainless steel vessels, and the wine is aged briefly in oak to emphasize the varietal character and the expressiveness of the terroir.
Organoleptic characteristics
Aroma: Rich aroma of black fruits, cinnamon, dried herbs and light smokiness.
Taste: Juicy and balanced taste with fine tannins, moderate acidity and a slight mineral nuance in the finish.
Food pairing: Ideal with pork fillet with herbs, duck with red wine and roasted root vegetables.
