Staro Oryahovo Winery is a small artisan winery located near the Black Sea coast, in an area with a cool maritime climate and old winemaking traditions. It works with a focus on the vineyards and terroir, creating limited edition wines with a distinct personality.
Varietal composition: 100% Sauvignon Blanc
Terroir: The vineyard, marked as a "single vineyard", is located near the village of Staro Oryahovo, on light sandy-clay soils with limestone inclusions. The sea breeze and sunny exposure create a balanced environment in which the grapes combine ripeness and freshness.
Vinification: The grapes are hand-picked and cooled immediately upon arrival at the winery. After gentle pressing, fermentation takes place in stainless steel tanks at a low temperature, with partial contact with the lees for better volume. No oak is used to preserve the purity of the variety.
Organoleptic characteristics
Aroma: Fresh and aromatic nose with pronounced nuances of elderberry, citrus, green apple and light minerality.
Taste: Lively and elegant, with a juicy structure, bright acidity and a long, grassy-citrus finish.
Food pairings: Very suitable with pasta with white wine and shrimp, salmon tartare, salads with fresh herbs or mussels.
Serving temperature: 8°–10°C
Aging potential: Up to 2 years after harvest
