Chateau Kopsa is located in the heart of the Rose Valley, near Karlovo, and is one of the few family-owned chateaux in Bulgaria that combines a winery and vineyards. The winery is distinguished by its commitment to terroir wines that reflect the specifics of the region and an approach focused on elegance and authenticity.
Varietal composition: Chardonnay
Terroir: The vineyards are located on the southern slopes of the Stara Planina Mountain, at an altitude of about 450 m, on limestone and sandy soils. The climate in the region is characterized by long, dry summers and a noticeable temperature amplitude between day and night, which favors the preservation of the aromas and acidity of the white varieties.
Vinification: The grapes are hand-picked and undergo selection. After cold maceration, fermentation takes place in stainless steel vessels at a controlled temperature. Part of the wine is aged on fine lees in Bulgarian oak barrels, which gives depth and softness.
Organoleptic characteristics
Aroma: Fine nose with nuances of peach, pear, vanilla and toasted bread crust.
Taste: Dense and harmonious body with well-integrated acidity, soft development and a long, memorable finish.
Food pairings: Recommended with risotto with porcini mushrooms, stuffed zucchini with rice and cheese or white meat with cream sauce.
Serving temperature: 10°–12°C
Aging potential: Up to 4–5 years after harvest
