Dragomir Wine Estate is a boutique winery located in Plovdiv, with a clear focus on a selection of terroir wines from the Thracian Lowlands. It works with carefully selected grapes from various vineyards in the region, combining modern technology with an individual touch and a desire for authenticity in each bottle.
Varietal composition: Chardonnay, Sauvignon Blanc, Dimyat
Terroir: The grapes come from different plots in the Saedinenie and Brestovitsa regions. The soils are predominantly clay-limestone with good drainage. The climate is typically continental with warm summers and cool nights, which helps to combine the ripeness and freshness of the varieties.
Vinification: Each variety is vinified separately. After hand-picking and selection, the grapes undergo a short cold maceration. Fermentation takes place at a controlled temperature in stainless steel vessels. A short stay on the fine lees contributes to softness and complexity. The final blend is precisely balanced for harmony and style.
Organoleptic characteristics
Aroma: Fine and complex nose with nuances of tropical fruits, citrus peel and white flowers.
Taste: Fresh and harmonious, with a well-defined body, soft acidity and a fruity-mineral finish.
Food pairings: Suitable with shrimp pasta, roasted chicken with herbs, goat cheese salads or grilled salmon.
