Grape variety: 100% Sauvignon Blanc
Terroir: The vineyards are located in the warm and sunny MurrayDarling region of South-East Australia. The soils are sandy-clay with well-developed drainage, the climate is warm with cool nights and low humidity – conditions suitable for the accumulation of fruity aromas and pure freshness
Vinification: The grapes are hand-picked early in the morning and chilled before pressing. Fermentation takes place in stainless steel tanks at a controlled temperature (around 14–16°C). In some cases, the wine is left briefly on the fine lees for a denser texture, without contact with oak.
Organoleptic characteristics
Aroma: Fresh and expressive, with nuances of passion fruit, vervain, blackcurrant, green beans and citrus zest
Taste: Medium-bodied with pronounced freshness, juicy fruitiness of tropical fruits, highlighted by a green apple dimple and a mineral finish
Food pairing: Suitable for Asian cuisine, salads with citrus dressing, seafood, grilled fish and light appetizers
Serving temperature: 8°–10°C
Aging potential: Up to 3 years after harvest, with best consumption in the first 2 years
