Produced by Dragomir Wine Estate – a boutique winery founded in 2006. The winery is located in the village of Bresnik in the heart of the Thracian Lowlands, and is distinguished by its focus on limited series of wines with a distinct individuality and terroir character.
Varietal composition: 100% Sauvignon Blanc
Terroir: The vineyards are located in the Rhodope collar, on sandy-clay soils with good drainage. The climate is moderately continental with warm days and cool nights, which favors slow ripening and the accumulation of aromatic compounds.
Vinification: The grapes are hand-picked and undergo careful selection. After a short maceration and gentle pressing, fermentation takes place at a controlled temperature in stainless steel vessels. The wine is aged briefly on the lees to give texture and complexity.
