Castel Firmian is part of the Mezzacorona group, located in the enclave between the Dolomites and the Adige River Valley, where strong temperature amplitudes create wines with expressive freshness and minerality.
Varietal composition: 100% Sauvignon Blanc
Terroir: The vineyards grow in the hilly parts of Trentino, along the Adige River, on stony-clay soils with a high content of calcium and quartz fragments. The climate combines warm days and cool evenings, together with a mountain breeze, which enhances the fruit concentration and acidity in the grapes.
Vinification: Traditional fermentation is applied with short contact with the skins, for optimal extraction of aromas. The juice ferments at a controlled temperature (16–18°C) in stainless steel tanks, without malolactic fermentation, to preserve freshness and varietal nuances.
Organoleptic characteristics
Aroma: Dominate notes of green pepper, elderberry, French blackcurrant, asparagus and tomato leaves, supported by fresh citrus and grass.
Taste: Fresh, green-mineral profile with crisp acidity, juicy finish and a light spicy note.
Food pairing: Goes well with fish, seafood, asparagus, cream cheese and green salads - a classic choice for refreshing dishes.
Serving temperature: 10°–12°C
Aging potential: Up to 2–3 years after harvest.
