The grapes come from our own vineyards in Southern Bulgaria, in the Sliven region
Soils: alluvial-clay and slightly sandy
Climate: continental with southern sun, providing aromatic ripeness and freshness
Wine style: modern, fruity-aromatic Sauvignon Blanc, in a light to medium body
Vinification
Hand or machine picking in the early morning
Cold fermentation in controlled conditions
Aging on the lees for additional freshness and balance
No contact with oak - pure varietal style
Aroma
Fresh, typical of the Sauvignon Blanc variety
Notes of:
Citrus (lime, grapefruit)
Freshly cut grass
White peach
Slight hint of elderberry and green pepper
Taste
Light and refreshing
Well balanced acidity
Citrus attack with a subtle herbal accent
Finish: clean, medium-long, with a floral-mineral note
