Zaara Estate Winery – a boutique winery located in the heart of the Thracian Lowlands, in the Stara Zagora region. The winery focuses on creating modern wines with a terroir character, relying on manual selection of grapes and modern vinification technology.

Terroir:
The vineyards are located in the Nova Zagora region, in the PGI Thracian Lowlands – a region with a favorable temperate-continental climate and clay-limestone soils. The sea breeze from the Aegean Sea has a gentle influence, which contributes to the freshness, aromatic intensity and minerality of the wines.
Vinification:
The grapes are hand-picked and go through a gentle press with careful selection. Fermentation takes place at low temperatures in stainless steel vessels, in order to preserve the freshness and typical varietal aromas. Part of the wine is briefly aged on the fine lees to enrich the structure.
Organoleptic characteristics
Aroma:
Intense and fresh nose with accents of green apple, citrus (lemon peel and lime), passion fruit and fresh grassy notes. A slight hint of elderberry and nettle, typical of Sauvignon Blanc from cool terroirs.
Taste:
Lively and elegant body with a distinct but balanced acidity. The wine is distinguished by a long, mineral finish and a pronounced freshness.
