Produced by Zelanos Winery – a boutique winery located in the village of Slavyantsi, in the eastern part of the Valley of Roses. The winery focuses on creating wines with a pronounced terroir character, using modern technologies and hand-picking of the grapes.
Varietal composition: 100% Sauvignon Blanc
Terroir: Bash Koliba vineyard in the village of Slavyantsi, part of the PGI Thracian Lowland. The climate is moderately continental with a maritime influence, which contributes to the freshness and elegance of the wines
Vinification: The grapes are hand-picked at two different levels of ripeness and undergo careful selection. After cooling, fermentation takes place at low temperature in stainless steel vessels to preserve the freshness and fruity aromas of the wine. After a short stay on the lees, the wine is bottled.
Organoleptic characteristics
Aroma: Restrained nose with notes of freshly cut grass, ripe grapefruit and green apple
Taste: The fruity notes continue in the taste, complemented by spicy accents of white peach. The finish is long, with characteristic elegance and the right balance to fill the mouth with memorable freshness
Food pairing: Suitable for seafood, green salad or soft cheeses
Serving temperature: 8°–10°C
Aging potential: Up to 4 years after harvest
