Medi Veli is a winery located in the Struma River Valley, near the village of Harsovo. It works mainly with local and international varieties, focusing on experimental styles and a fresh interpretation of the region's terroir.
Varietal composition: Blend of Chardonnay, Sauvignon Blanc
Terroir: The vineyards are located in the Struma Valley. The climate is moderately continental with influence from the mountains and the river. The soils are stony-clay and contribute to the concentration of aroma and minerality in the grapes.
Vinification: The grapes are hand-picked and undergo a 14-hour cold maceration with the skins. Each variety ferments separately at low temperature in stainless steel vessels. The wine is aged on the fine lees with batonnage, without contact with oak, to emphasize freshness.
Organoleptic characteristics
Aroma: Fresh citrus fruits, white peach, acacia honey and floral notes.
Taste: Elegant and full-bodied, with a juicy structure, lively acidity and a long mineral finish.
Food pairings: Suitable for shrimp, seafood pasta, tuna or melon and prosciutto salad.
Serving temperature: 8°–10°C
Aging potential: Up to 2 years after harvest
