Bratanovi Winery is a family winery located near the town of Harmanli, on the southern slopes of the Sakar Mountains. The winery is distinguished by a manual approach to viticulture and environmentally friendly practices, with wild yeasts often used in vinification and minimal technological intervention.
Varietal composition: Chardonnay, Viognier, Tamyanka
Terroir: The vineyards are located on south-facing hills with sandy-clay soils and limestone inclusions. The region is characterized by long and dry summers, which allows for ideal ripening of the grapes, and night temperatures contribute to preserving the freshness and aromatic structure.
Vinification: Each of the varieties ferments spontaneously with wild yeasts at low temperature. Some of the wines are aged for a short time on the fine lees in stainless steel, avoiding malolactic fermentation in order to preserve the natural character of the fruit and the elegance of the blend.
Organoleptic characteristics
Aroma: Expressive and multi-layered, with notes of acacia, peach, citrus, indriche and musky flowers.
Taste: Fresh, juicy-fruity and lively, with well-defined acidity and a spicy, herbal finish.
Food pairings: Excellent choice for green salads with goat cheese, chicken with herb butter or risotto with zucchini and mint.
