Produced by Bononia Estate – a modern family winery located in Northwestern Bulgaria. The winery was founded in 2013 on the site of an old brewery and combines innovative technologies with respect for the local terroir.

Terroir: PGI * Danube Plain --> Bononia Winery is nestled between the villages of Koshava and Gomotartsi (near the city of Vidin), and the vineyards are located directly on the banks of the Danube River at an altitude of 35–50 meters above sea level. The soils are sandy-clay with good drainage, and the climate is moderately continental with a distinct Danubian influence – warm days and cool nights, which help preserve freshness and acid balance in the grapes.

Vinification: The grapes are hand-picked and undergo careful selection. After pressing, fermentation takes place at a controlled temperature in stainless steel tanks. No contact with oak barrels is used to preserve the natural fruitiness and minerality of the wine.

Aroma: Ripe green apple, pear, white flowers and a subtle creamy note.
Taste: Fresh, well-structured, with mineral accents and a long finish.
Food pairings: Suitable for cheese salads, grilled sea fish, chicken with cream sauce or mushroom risotto.
