Produced by Salla Estate – a boutique Bulgarian winery located in Southern Bulgaria, which focuses on limited edition wines with a pronounced terroir character and precise control at every stage of production. Salla Estate’s vineyards are located in Southern Bulgaria, an area with a favorable temperate-continental climate and a strong influence of Mediterranean air masses. Long sunshine, cool nights and well-drained soils support the accumulation of aromatic ripeness, preserving the freshness and natural acidity of the variety.
Vinification:
The grapes are hand-picked at optimal ripeness. After careful pressing, fermentation takes place partially in oak barrels, where the wine ages on the fine lees (sur lie) with periodic batonage. Controlled oak aging contributes to complexity, structure and elegantly integrated vanilla and buttery nuances without dominating the fruity character.
Organoleptic characteristics
Aroma: Complex and elegant nose with notes of ripe pear, yellow apple and peach, complemented by vanilla, toast, butter and fine nutty accents.
Taste: Medium to full-bodied with a creamy texture, well-balanced acidity and a harmonious combination of fruit and oak. The finish is long, soft and mineral.
