Produced by Midalidare Estate – a modern and innovative winery located in the village of Mogilovo, in the heart of the Thracian Lowlands. The winery is distinguished by its focus on boutique production, organic practices and philosophy of expressing the terroir character of each wine. The 42/25 series is inspired by the geographical coordinates of the vineyards – 42° north latitude and 25° east longitude – and presents fresh, modern wines with distinctive varietal expression.
Varietal composition: 100% Sauvignon Blanc
Terroir: The vineyards are located around the village of Mogilovo, at the foot of Sredna Gora. The soils are sandy-clay with good drainage, and the climate is moderately continental with high solar exposure and a distinct day-night temperature amplitude – conditions that favor the formation of bright acidity and a complex aromatic profile.
Vinification: Hand-picked in the early morning hours. The grapes are sorted and lightly pressed. Fermentation is carried out at low temperature in stainless steel tanks to preserve freshness and varietal aromas. Partial aging on the fine lees adds additional texture and depth.
Organoleptic characteristics
Aroma: Intense and fresh nose with notes of green apple, citrus, passion fruit, nettle and grassy nuances, typical of Sauvignon Blanc.
