Chardonnay – an elegant white wine from Lavinia Estate, created in a modern style that emphasizes the natural character of the variety. The 2023 vintage presents a balanced combination of freshness, softness and a fine fruit profile, typical of a well-expressed Bulgarian Chardonnay.
Terroir:
Transitional continental climate with cool, dry summers and warm winters. The region is characterized by the natural phenomenon of evening breeze – a light wind that appears in the evening and stops before noon, as a result of the different heating of the air between the plains and the mountains. Evening breeze is an excellent regulator of alcoholic fermentation and favors the formation of aromatic substances in the grapes. The soils are sandy-clay and clay-limestone.
Vinification:
The cooled grapes pass through a vibrating table for manual selection of the bunches. The crushed grapes enter a 2 cubic meter pneumatic press, where the berries are pressed whole to a pressure of 1.2 Bar. Cold enzymatic clarification, followed by fermentation with a pure culture of wine yeast at 13-15°C. Aging "sur lie" for 6 months in 500 liter French oak barrels. Blending of batches, stabilization, filtration and bottling.
Organoleptic characteristics
A fine, refined and noble Chardonnay with a radiant fruity character - fresh citrus, white peach, pear and delicate tones of juicy apple. Fermentation in 500 liter Baron Tonnelerie barrels and aging in 500 liter French oak barrels add cozy softness and complex barrique nuances - toasted brioche, roasted nuts, a fine buttery touch and noble vanilla. The taste is full, harmonious with elegantly balanced freshness. Long, mineral finish with a noble and refined character.
