Produced by Zagrey Winery – a family winery located in Parvomay, in the heart of the Thracian Lowlands. The winery focuses on organic viticulture and winemaking, combining traditional methods with modern technologies.
Varietal composition: 100% Sauvignon Blanc
Terroir: The vineyards are located on sandy-clay soils with good drainage. The climate is moderately continental with warm days and cool nights, which favors slow ripening and the accumulation of aromatic compounds.
Vinification: The grapes are hand-picked and undergo careful selection. After crushing, the grape juice remains in contact with the skins for several hours, after which it is separated and fermented at a temperature of 15–16°C.
