Chablis Fourchaume "old vines" is an elegant wine coming from the most prestigious Premiers Crus vineyards in Burgundy.

Vineyard: Domaine Laroche owns 2.44 hectares of this most prestigious Premier Cru vineyard - >70-year-old vines planted on a hill facing south and west, well protected from northerly winds. Fourchaume is one of the most beautiful vineyards of the estate. Open to the Serein Valley, the site takes full advantage of the hours of sunshine during the day.
Soils: Kimmeridgian limestone - The soils are deep and clayey at the foot of the hill, stonier at the top. The presence of brown and red clay provides nourishing water that allows for stress-free maturation.
Vinification: Hand-picked. The grapes are sorted at the entrance to the cellar before being placed in a pneumatic press. High-quality low-pressure pressing with juice separation and selection of only the cores. Gentle extraction of the most noble aromatic compounds. Alcoholic and malolactic fermentation takes place in French oak barrels (100%) in the historic cellars of Obédiencerie in the heart of Chablis. These barrels, aged from 1 to 7 years, range in size from 228, 300, 400, 500 to 600l. This way, the aromatic palette of Chardonnay is expressed as cleanly and precisely as possible. The wine is aged for 12 months from fermentation to bottling.
