Produced by Maison Albert Bichot, a family-run winery founded in 1831 in Beaune, Burgundy. Today, the winery manages several domains in different parts of the region, including Domaine Long-Depaquit in Chablis, and is known for its commitment to sustainable viticulture and the terroir expression of its wines.
Grape variety: 100% Chardonnay
Terroir: The vineyards are located in the Chablis appellation, on limestone-clay soils from the Kimmeridgian period. The climate is temperate continental with cool nights, which contributes to preserving the freshness and minerality of the wines.
Vinification: The grapes are hand-picked and vinified at a controlled temperature in stainless steel tanks. The wine is aged for between 10 and 11 months on fine lees, which gives additional texture and complexity.
